Hearty Beef and Vegetable Soup

Ingredients

1 cup freeze dried beef

1 cup freeze dried mixed vegetables (carrots, peas, corn)

1/2 cup freeze dried onions

4 cups water

1/2 cup barley

1 bay leaf

Salt and pepper to taste

Instructions

Rehydrate the beef and mixed vegetables in 2 cups of boiling water for 10 minutes.

In a large pot, add the remaining 2 cups of water and bring to a boil.

Add the rehydrated beef, vegetables, onions and barley to the pot.

Stir in the bay leaf, and season with salt and pepper to taste.

Reduce heat to medium and let the soup simmer for 30 minutes.

Remove the bay leaf and serve hot.
