Roasted Chili Verde Chicken Enchiladas
Ingredients:
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

- 1/2 teaspoon onion powder
- 1/2 teaspoon chili powder

- 1 can (15 ounces) green enchilada sauce
- 8-10 corn tortillas
- 1 cup shredded Monterey Jack cheese
- 1/4 cup chopped cilantro
Instructions:
- Preheat oven to 400°F.
- Toss chicken with olive oil, salt, pepper, garlic powder, onion powder, chili powder, cumin, and smoked paprika. Roast for 20-25 minutes or until cooked through.
- Shred chicken and mix with 1/3 of enchilada sauce and 1/4 cup cheese.
- Spread 1/3 of remaining enchilada sauce in the bottom of a 9x13 baking dish.
- Fill each tortilla with chicken mixture and roll up. Place seam side down in baking dish.
- Pour remaining enchilada sauce over the top of tortillas.
- Sprinkle with remaining cheese.
- Bake for 20-25 minutes or until cheese is melted and bubbly.
- Garnish with chopped cilantro before serving.
- To freeze, wrap enchiladas tightly in plastic wrap and then aluminum foil. Freeze for up to 3 months.
- To reheat, thaw overnight in fridge. Bake covered with foil at 350°F for 20-25 minutes or until heated through.
Butternut Squash and Black Bean Enchiladas
Ingredients:
- 1 butternut squash, peeled and cubed
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 8-10 corn tortillas
- 1 can (10 ounces) red enchilada sauce
- 1 cup shredded Monterey Jack cheese
Instructions:
- Preheat oven to 375°F.
- In a large bowl, combine butternut squash, black beans, diced tomatoes, onion, garlic, olive oil, cumin, chili powder, salt, and black pepper.
- Spread mixture evenly in a 9x13 baking dish.
- Cover with foil and bake for 40-45 minutes or until squash is tender.
- While squash is cooking, heat tortillas in microwave or oven until pliable.
- Spread 1/4 cup enchilada sauce in the bottom of another 9x13 baking dish.
- Fill each tortilla with 1/4 cup squash mixture, roll up, and place seam side down in baking dish.
- Pour remaining enchilada sauce over the top.
- Sprinkle with shredded cheese.
- Bake, uncovered, for 20-25 minutes or until cheese is melted and bubbly.
