Chicken Enchiladas
Ingredients:
- 1 cup chopped onion
- 3/4 cup chopped green bell pepper
- 2 cloves garlic, minced
- 1 cup cooked chicken breast, shredded
- 1 cup canned black beans, rinsed and drained
- 1 cup frozen whole-kernel corn, thawed
- 1/2 cup bottled salsa
- 1/2 cup fat-free sour cream
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 (8-inch) flour tortillas
- 1/2 cup (2 ounces) reduced-fat shredded cheddar cheese
Instructions:
- Preheat oven to 350°F.
- Heat a large nonstick skillet over medium-high heat. Add onion, bell pepper, and garlic; sauté 5 minutes or until tender. Add chicken, beans, corn, salsa, sour cream, salt, and black pepper; cook 5 minutes or until thoroughly heated.
- Spoon about 1/2 cup chicken mixture down center of each tortilla; roll up. Arrange enchiladas, seam sides down, in an 11 x 7-inch baking dish. Sprinkle cheese evenly over enchiladas. Bake at 350°F for 20 minutes or until thoroughly heated.
Beef Stroganoff
Ingredients:
- 2 pounds ground beef
- 1 large onion, chopped
- 1 can (10-1/2 ounces) condensed cream of mushroom soup
- 1 can (10-3/4 ounces) condensed golden mushroom soup
- 1 jar (4-1/2 ounces) sliced mushrooms, drained
- 1/2 cup beef broth
- 1 teaspoon Worcestershire sauce
- 2 cups sour cream
- 12 cups cooked egg noodles
Instructions:
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
- Add soups, mushrooms, broth, and Worcestershire sauce; mix well. Cook and stir for 10-15 minutes or until heated through.
- Cool. Pour mixture into a freezer container and freeze for up to 3 months.
- To use, thaw beef mixture in refrigerator overnight.
- Reheat beef mixture in a large saucepan until heated through. Stir in sour cream; heat through but do not boil. Serve over noodles.
