Ingredients
- 1/2 cup sugar
- 1/3 cup water
- 1/4 cup fresh lemon juice
- 1/4 teaspoon vanilla extract
- 1 pound fresh strawberries, hulled and halved
- 1 pint fresh blueberries
- 1 (8-ounce) package cream cheese, softened
- 1 (14-ounce) can sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 2 cups heavy cream, whipped
- 1 (12-ounce) pound cake, cut into 1/2-inch slices
Instructions
- In a small saucepan, combine the sugar, water, lemon juice, and vanilla extract over medium heat. Cook until the sugar has dissolved, stirring occasionally. Remove from the heat and let cool.
- In a large bowl, combine the strawberries and blueberries. Pour the cooled syrup over the berries and toss to coat.
- In a medium bowl, beat the cream cheese until smooth. Add in the sweetened condensed milk, lemon juice, and vanilla extract. Beat until smooth.
- In another bowl, beat the heavy cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
- To assemble the trifle, arrange a layer of pound cake in the bottom of a large glass bowl. Spoon a layer of the berry mixture over the cake. Pour a layer of the cream cheese mixture over the berries. Repeat with the remaining ingredients, ending with the cream cheese mixture.
- Cover and refrigerate the trifle for at least 1 hour before serving.
