Ingredients:
- 1 pint fresh strawberries
- Fruit Fresh (optional)
Instructions:
- Wash the strawberries and remove the stems and leaves.
- Cut the strawberries into even slices so that they dry uniformly.
- Sprinkle some Fruit Fresh on the slices (optional).
- Place the slices on a single layer on a baking sheet lined with parchment paper, and freeze for a few hours.
- Take the slices out of the freezer and vacuum-seal them.
- Warm them up to room temperature, and then place the sealed strawberries into the freeze dryer.
- Run the freeze dryer for about 20-24 hours.
- Store the freeze-dried strawberries in an air-tight container.
These freeze-dried strawberries are perfect for snacking, adding to smoothies, or even using as a topping for oatmeal or yogurt.
Freeze-Drying Vegetables
Vegetables can be a bit trickier to freeze-dry than fruits. However, it's definitely worth the effort. My go-to vegetable for freeze-drying is sweet corn. Here's how you can freeze-dry sweet corn:
Ingredients:
- 2 ears of fresh sweet corn
- Butter (optional)
- Salt (optional)
Instructions:
- Shuck the sweet corn and remove the kernels.
- Blanch the kernels in boiling water for about 3-4 minutes.
- Drain the kernels and then butter and salt them (optional).
- Spread the kernels in a single layer on a baking sheet lined with parchment paper, and freeze for a few hours.
- Remove the kernels from the freezer and vacuum-seal them.
- Warm them up to room temperature, and then place the sealed sweet corn into the freeze dryer.
- Run the freeze dryer for about 24-36 hours.
- Store the freeze-dried sweet corn in an air-tight container.
I love adding freeze-dried sweet corn to soups, stews, and even salads. It's a great way to add some texture and flavor to your dishes.
