Broccoli Cheddar Stuffed Chicken

Ingredients

4 boneless chicken breasts
2 cups finely chopped broccoli florets
1 cup shredded cheddar cheese
1/4 cup finely chopped onion
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
2 tablespoons olive oil

Instructions

Preheat oven to 375°F. Grease a 9x13 inch baking dish.
Mix together broccoli, cheddar cheese, onion, garlic, salt, pepper, and paprika in a bowl.
Cut a pocket into each chicken breast, being careful not to cut through the other side.
Fill each pocket with the broccoli and cheese mixture.
Heat olive oil in a large skillet over medium-high heat. Brown chicken on both sides, about 5 minutes per side.
Transfer chicken to prepared baking dish and bake for 25-30 minutes, until chicken is cooked through.

Cilantro Lime Chicken

Ingredients

2 lbs boneless, skinless chicken breasts or thighs
1/2 cup fresh cilantro, chopped
4 cloves garlic, minced
1/4 cup fresh lime juice
2 tablespoons olive oil
2 teaspoons honey
1 teaspoon salt
1/2 teaspoon black pepper

Instructions

Combine cilantro, garlic, lime juice, olive oil, honey, salt, and pepper in a bowl.
Add chicken and toss to coat.
Divide chicken and marinade into two separate gallon-sized freezer bags. Freeze for up to 3 months.
To cook, thaw chicken and marinade overnight in the refrigerator.
Preheat grill to medium-high heat. Grill chicken for 5-6 minutes per side, until cooked through.
